This month, Butter Lover Moira, has gone to extraordinary effort to share a personal family story and treasured recipe with us all.
Her Grandmother's Fancy Strawberry Shortbread are incredible.
Perfect to make into gifts or simply whip up a batch to enjoy yourself!

I made [these] from my Grandmothers old Recipe Book which was basically an old exercise note book to which she wrote all her recipes using a pencil.
My Grandmother was one of the cooks & in charge of the domestic girls at what was called The Golden Age Children’s Polio Convalescent Home which existed from 1949-1959 in Leederville.

Fancy Shortbread from Moira's Grandmother
What you need for the Shortbread:
700gr Plain Flour
60gr Icing Sugar
60gr Custard Powder
350gr The Butter People Pure Butter (or optional to use Salted Butter)
How to make the Shortbread:
- Pre-heat to a moderate oven temperature. Moderate means between 180-190 degrees Celsius.
- Keep aside a cold oven tray, lined with baking paper.
- Sift together flour and custard powder, place aside.
- Cream together butter and sugar until pale in colour.
- Add flour and custard powder mix and gradually bring together to make a dough.
- Make into small balls about the size of a walnut, and place onto cold baking tray.
- Gently press with a fork.
- Bake in oven until cookies are pale brown/ golden in colour.
- Allow cookies to cool completely before filling and assembling.
What you need for the Strawberry Filling:
1 cup Icing Sugar
Not quite 1/2 cup Cream
3 tbsp Strawberry Jam
How to make Strawberry Filling:
Combine ingredients.
Once cookies are completely cool, add a generous dollop of strawberry filling and sandwich together.
Dust with iceing sugar and serve.
